The riper a banana pepper is the sweeter it is.

How to preserve hot banana peppers. Remove the stems and put them in the compost. The yellow wax pepper is moderately hot measuring about 3 500 to 4 000 scoville units. Once the peppers are frozen store them in a seal able freezer bag.

The jars need to be sterilized by boiling them for 10 minutes in a pot of water on the stove. Add the water to the frying vegetables cover and simmer for ten minutes. Remove the lid and add sweet and sour sauce to taste.

Store in the fridge. Remove leaves dirt and any bad peppers. Using your jar lifter remove the jars and place on a thick towel.

Pour brine over peppers to within of the top. Wash and clean the hot peppers. Let cool for 24 hours and then check the jars to make sure they sealed properly.
